Key Lime Delight

My good friend turned 34 last week and for her present I'm going to make her a side table for her foyer. Unfortunately.... she might have to wait until summer to see it... I'm hoping to find a fixer upper at a thrift shop or craigslist, otherwise I'm going to have to try and make one! Yikes! =)

I still wanted to do something for her birthday so I decided to bake!


She LOVES Costco key lime cookies. Okay, we both love them. Anyone know what I'm talking about? We haven't been able to find them in months! 


So my hope was to capture a bit of key lime goodness for her in a cupcake form.

I hunted around and found this recipe that looked good. I chose to forgo the green food colouring- the less artificial the better.

Although the recipe calls for cake flour, I just used regular flour. To make this substitution just decrease the flour amount by 2 tablespoons and you'll be as good as gold!

I really need to invest in a mixer with paddle attachments. I hand mixed everything and boy... with all that butter, my right arm got a workout! It took me over 3 hours to make 24 of these babies... 

I was so rushed for time I didn't have time to ice them the way I had wanted to. Luckily I had key limes left over that I used as toppers. Hey, better than nothing.

As always with my baking endeavours, my 4 year old nephew was on hand to help! When all was said and done, I gave him a cupcake because as he says, "the helper needs to test the batch". As I was cleaning up I heard him go, "Yelch!!!" I ran over thinking, "Oh no! What's wrong?! Are they gross??" 

There he was with a sour face and wiping his tongue. I forgot to tell him the key lime slice was just garnish.... haha!

On a good note, they turned out much better than I could have hoped for! This recipe is awesome! I highly recommend it. 

The cake was really moist and fluffy and the top of the cake was just the right bit of crunchy- yum! The cream cheese icing was yum too! The only thing is because it was hand  mixed, the icing wasn't as smooth as I wanted. With more time or with a proper mixer, these would be top notch! 

I'm glad the recipe tells you that when you add all the ingredients, the batter looks curdled. Doesn't sound very appealing, does it? If the recipe hadn't said anything about this, I would have been terribly concerned!

As much work as this was, it was totally worth it and I would definitely make them again!

  1. Mmm.. Om nom nom. lol. I've never made those! Are they similar to lemon cupcakes? Hmm.. time to experiment in the kitchen!

    1. They are similar to lemon I guess (I've never had a lemon cupcake) but more tart! It's SO good! Try it and let me know how it turns out!
